You should NOT use more than 1 for restitution anyway (otherwise it gets crazy). Think of restitution as a percentage...between 0% and 100% (0.00 to 1.00)
Exceeding 1.00 (100%) will actually cause the bounce impact to increase with each hit.
I recommend that you make a quick test of a ball and a table top. Drop the ball vertically on the flat surface with different restitutions to get a feel for how it behaves. Change the restitution on the table as well.
Do this little test and play around with it and you will be a master of restitution in no time.
