It appears when I draw with the brush tool or line tool or something, then try to erase the bit that goes to far over the line it crosses.

Ok like this I use ERASER/RUBBER on black like, so where I erase leaves a Black line around the erased area. wtf? lol
Any other illustrator tips would be great.

it's because the eraser is effectively modifying the shapes of the vector paths. if you need to move lines back from crossing over, you are far better using the 'direct' selection tool, its the second arrow tool down. this lets you select individual points, so if your line over laps an edge, grab the end point of the line with this tool, and drag it back to where you want it to end! :)

Hmm, What if the lines are too thick?

not sure what you mean tbh, but if its the outline of a vector shape then select the shape, and adjust the 'Stroke'

I miss the simple days where Erase just erased.

if you want to be making vector art, but with a conventional style eraser, i'd suggest using flash ;)

True, might as well use Photoshop?

Illustrator is pretty different. We don't use the concept of "an eraser" much
as I always tell my students "it's like 'building a picture' instead of 'drawing' it"

I suggest an online tutorial in basic illustrator
