How do I set it so that when the player rotates the device that the scene stays the same?

Uncheck the autorotation check-boxes in the Scene attributes section

Just keep in mind, that Apple requires you to be able to do this. If you don't, you're likely to get your app denied. If you don't want it to auto-rotate, than you'll have to make it available in some other way (see Tiny Wings)

If your game is to be played in Landscape Left you also need to make it available in Landscape Right.
I didn't like the way the autorotation worked in my game so I made custom rotate rules for many of my actors.
