How public/private is publishing?

we had a couple of questions regarding publishing- we have a game project that we've built almost exclusively in GameSalad, and we need to begin testing on devices. Using the preview function is a bit cumbersome, so we were hoping to create some ad hoc builds. I did a quick test project for this and received an .app file that I was able to run on my phone without issue.
The question is how public is that test game build? I don't care if people see that one, since it was just circles and squares. The other has a lot of custom art that is under NDA, and I cannot make it public or I put myself at legal risk. So are things published with GS automatically made public? Is there a way to
