I don't use them and assumed that they are a hangover from days of slow broadband when an interlaced png would build an image across the scene, filling detail as it did several passes of it's data, so you didn't have a blank image until it fully arrived. As GS loads the graphics for the scene on loading and before starting I cannot think that it helps. Not sure if it hinders, or actually really matters... So may as well just stick to non interlaced.

Another question: If I re-Save for Web and Devices the same image (already optimized) and choose not to interlace it, would I make it worse? I know I should go back to my Original image and make it from there but they are all over the place...

If it's already working, I wouldn't worry too much. You could perhaps do a test with a few images if you are worried or if someone else better informed can post an answer here it might even save you that bother.

In answer to your second question- png is a lossless format, unless you convert to a lesser bit depth and if you are using transparence you won't be doing that, so resaving should not be an issue. I would however say that save masters at the highest res you think you will ever use and produce sets for an different size of device app. These I already have set up as photoshop actions so I can just run them on a batch for size I wish. If you base the action on percentage rather than final size then it can work across most things for a target device based app

I would imagine you will be fine. if you want you can just save as .psd and GameSalad auto converts those for you.
