I went through the publish button thing in GS and I received my .app file...but what about the Xcode file? Don't I need that to submit my game?

nope you dont get a xcode file. You recieve a .app file and you zip that and submit to apple. Check out all the publishing tutorials in the gs cookbook

Alright, but how do I test my game on my iPod touch? I would like to make sure that the final version of my game is good.

That is either done through the Viewer or an Adhoc build.

for adhoc you set up a adhoc distro provision profile in provisiong portal, publish like you normalyl would excpet you select that adhoc provisoiing profile you made when publishing. Then just drag the .app file over the itunes icon in the dock and let go, then sync your device
