to use text just type the text into a text attribute that is referenced by an actor in a display text behaviour. To display a custom font can be done in 2 ways. The first to to display an image of the message in a single image., or the second method which is much harder is to build actors with sets of letters in as images for each letter and have them controlled by rules. This is a lot of work and I suggest that do it with single images of blocks of words unless you really have to. If you want to go the route of displaying things with words built from custom letter look for the custom font score examples and work from there...
Hopefully with updates to GS there will be much better text handling (it seems to be indicated as the idevice keyboard is going to made available).
