I like level better because it just me some other people may like endless better. If the levels are long you make each level endless but you must have to get a certain score on the first level to make it to the next harder level.
Levels will allow a lot more possibilities. It really depens of the game mechanic and if it's a highscore based game. Both can be addictive, procedural is more coding work and level is more design work. I prefer levels, but randomly generated levels suits very well the pickup and play type of iphone games. If you have a lot of game ingredients to offer variety, levels might be better. I would be more willing to pay for a game with levels personally as it feels more like a complete game.
I'd say, if your gameplay allows to have fun random levels, it might be the best. If done well it can be highly replayable
One is based more on memory and understanding and other on reflex and mastering the mechanic, so it really depens on the game.

If I'm spending a buck on a game, i'd much rather it be endless rather than be over after a few minutes of play (or hours of play).
