Hi bmw, You have a few options. The freebie one is to use quicktime7 and record your screen, then crop the image to a 4 x 3 ratio or, 16 x 9 if widescreen makes better use of the app.
You can use a digital camera and film yourself playing your game but the quality will be nicer to grap the video from the screen. There are commercial apps which do that well but they cost around $100 ish
I'm sure there are a few ways to finish your demo. Can you have a friend film you with her/his iPhone?
