Open package contents of Gamesalad (as in the application) and find the source of where the display text behavior is getting its fonts, and add more fonts to this?
It might not be legal, or work when published, and if you have to ask you probably can't do it with any easy so I would just wait until they put more fonts in and until that time use fonts in bitmap form, and for scores look at one of the demos for custom fonts.

Ha ha... I'm not sure if that's realistic and that's certainly not simplified, but your game should be more optimized if it's possible ;-)
If I worked at GameSalad, I'd try to add device attributes for system time and model info. I'm thinking that it might not be that easy for developers to add their own code though. I'm not sure, but it seems like there's a lot of bureaucracy going on behind the scenes.
I'll hazard a guess and say an extended font library probably wont be on the cards, as its expensive business. Buying a font to use on your printed materials is one thing, or using it to create a static piece of artwork. But packaging a font inside a program has an entirely different set of rules, and expensive contracts.
Even if you are using custom fonts, you should be really careful about what you use, and make sure you have the rights to use it in a program - i've seen people land in boiling hot water over this stuff before!
ya, even our beloved helvetica only have one weight... i guess they all have one weight.. perhaps we can include system fonts since they are mostly public domain. or ability to upload fonts since i'm sure it's just a font file that GS pulls from the library. That way the developer will be the one paying the royalty of using that typeface. but anyway.. low priority. text display are fuzzy anyway.. so i usually just use image/custom number etc.
