I thought about it for my latest project. Not sure what apple would say for an iPad version as they can be quite particular about rotations. Also it wouldn't transfer well to the Mac either.
I've done it at a project level, but ended up having to build some levels sideways. This was because I seemed to problems with the camera control when switching between modes if you select a combination for different scenes. There may be other methods around this, but I ve not discovered them.
If you are going to do something like that, make really sure it adds something to the gameplay in a seamless way. Cause as gamer when a game changes things like that (and one have to think differently) that's more jarring than fun, and really off putting.
Look at Trine, it was wonderful experience all the way through, except for the last level where they changed the pace, and pretty much everybody hated it.
