With iPad 1 it will crash at just over 100mb. Although the ram is 256mb your app shouldn't go much over 100mb (same goes for a 3gs and iPod touch 4G as they all have 256).
With the iPad 2 and iPhone 4 you can go to about 210mb before you might get a little instability.
Ive found that timers become unstable at around 80mb ram on iphone 4, maybe my iphone is broken but im pretty sure i read other people saying not to go over this amount too

Jailbreaking makes a huge difference because it adds extra background processes.

There's other solution - you should restart your device from time to time to clear memory. I noticed that if I have my iPhone or iPad turned on for a long time, more games are crashing.
