Working with people under 18?

There are a lot of very talented members here that are under 18 offering services for hire, so I was wondering how people were protecting their assets when doing so.
I have stayed away from working with a minor due to what my perception of the law was. (a person under the age of 18 can not enter into a legal contract and if they do they can rescind the deal at any point and must be given back what they produced)
I have seen many projects (now for sale in the app store) where a good portion of the levels or the game were created by a minor. So how are people protecting their assets?

Just wondering if I was missing something. Some of these guys are so talented, you wouldn't guess they were 14 or 15, especially when they use a company name and talk about marketing teams.
I am 42 now
