Is there things I need to do for iOS5 or it will work publishing the games as usual?

I'm not sure what do you mean with this question but making games for IOS 5 will be the same as for making games for IOS4. Its the same process.

Gamesalad (as far as I know) will work fine on IOS 5

Yes, I'm on the developers preview and my GS apps run the same if not faster on iOS 5

Yep; all of the apps work the same on iOS 5 with one exception, they can potentially be smoother and faster.
