They might simply use "display recorder" on a jailbroken device , with the new iPhone 4s and iPad 2 i think the result should be pretty smooth , and you get 960x640 or 1024x768 res which is high enough .
Another way is to plug the iPhone/ipad to TV-OUT and record the output , there are many ways to this , i like that with GS we can simply record the screen .
I too would love it if someone could shed some light on the TV-OUT topic.

iPads have an hdmi Adapter that allow you to simply display the screen on a tv. I would guess if you have the right equipment you could even use airplay mirroring to an external recorder of some kind. But I think more likely this is a jailbroken device using a display recorder.
