Question about tables utilization

in Working with GS (Mac)
Is it better to create more tables (1 for each category) than to have less (using the table for multiple categories of values) and have empty spots in the table?

By categories I mean store items cost, images, inventory numbers, cheats, etc.

    I prefer multiple tables if you want easy management and to consolidate similar data together instead of looking through one table with massive data size.
