How long should you make a simple simulation game?

I just made a game that gets progressively harder the longer it is played. I am now trying to figure out the difficulty of the game. I want the game to be difficult enough so that it is not super boring at the beginning, but not so hard so that the player plays for a very short time before he dies. Like doodle jump and temple run, my game will have a max difficulty at some point, so that the game does not get anymore difficult at that point. I really just want to know how long it should take to reach that 'max difficulty'. l'm thinking that a normal game should be like 2 minutes long, and max difficulty should be like 5 minutes long?
