In GS when you preview your game, in the right top corner there is a camera icon. Click it and you can save the screenshot, apply that screenshot to the scene preview image, or make the screenshot your game preview image. Off the top of my head im not sure, but I dont think the screen shots are the right size so you will probably have to just resize them in any image editing software.
If that does not suffice, hold down shift, command, and press F4 and you can click and drag on the screen and take a screen shot of the specified area. This works good while running your app on the simulator! Hope this helps!
They get cut off with the camera button and portriat mode you only get about half
here was my work around.. Fired the game up in the ipad GS veiwer I just ended up doing the command+!@#$%+4 thing to draw the little square around them Since they were a little small to blow up to full size i did the thing where you leave them framed in the ipad and then added the classic cliche starburst for effect...

No iphone screenshots will be taken by itunes connect.
They tell you on the upload page, which resolutions they accept.
