Snapz pro X is good and simple and the free trial doesn't put a watermark in the middle of your video! If you want to get an awesome one, I agree that ScreenFlow is sweet.
ScreenFlow is the donkey's wingnut but it's extra features sometimes do make a quick demo into something of a production epic. It's really important with any kind of training or presentation material to plan your dialogue and procedure well. A quick look on youtube will show you how NOT to do it 99% of the time.
You can't go wrong with QuickTime 10 and it will force you to concentrate on content not glitz!!
