Resolution, best optimized for iphone 5/5s

Hey everyone, wondering is someone can make this issue clear for me. Putting a lot of work into my game things are going well, but want to make sure I am doing things right so I don't have to go back a redo a lot of work. I want my game to look great with hd graphics on the iphone 5/5s screen. When I started making the game I chose the standard iphone settings for resolution. Finding out later they were 568x320. Somebody told me if I want HD graphics to just make my images twice the size they will be displayed at. So if my character is 40x40 make the graphic 80x80, and GS will display it in HD even though the res for the game is 568x320? Isnt that still only going to make the game 640p? I'm confused as I have made a character sprite to test with, but when I test it in viewer it looks terrible, like the game is playing in 320p. Also when I upload it to GS arcade it still looks low res. If in the GS viewer I switch to 720p HD fullscreen the character actually looks good, though I didn't change the res of the game. Will that be a good indication of what my game will look like on iOS? I don't currently have a developer account to test it out.
I saw somebody post that they made their resolution size the actual size of the iphone retina display. Is GS able to do that and will it publish to IOS well even though it has a different standard setting built in for iphone that is 568x320? Will upping the scene and camera size like that hurt performance?
Just wanting some help to make sure I am developing in a way that will look great in HD on the iPhone. I am assuming if I change the resolution it will affect all my behaviors for movements of the characters, so I would rather figure this out sooner rather than later.
