The button offset thing is new to me, it makes sense, devices tend to be held angled away from the eyes (rather than upright / parallel) so it makes sense to offset the touch area from the actual button graphics (just use a separate actor for the button artwork) as you view the button through the slight refraction of the (thin) glass.
I bet you these kinds of subtle tricks have very little effect on their own, but when you implement all of them there is an accumulative effect whereby everything just starts to feel a little more polished, solid and tactile.
