First time using GS

Hi all, this is my first time using GS, or any app developing tool to be honest, and I am in need of some help!
I have searched for a good while on the forums for what I need but can't seem to find it.

I have an idea for an interactive book/guide app to be used preferably on multiple devices (just iOS, for now)
but I don't understand how to make this possible with iPad, iPhone 4,4s,5 etc without losing anything in the way of cutting off the image or image quality. I assume it will be easiest to have it locked in portrait mode.

Of course I want it to be high quality so should I just stick to Retina screen iPhones?

Another reason I am confused about this is that, I assume to work with iPhones it would be a different screen size, depending on the iPhone, or does GS do this all for you?

On a side note, if I want to create high quality images and backgrounds, what size canvas should I be using for backgrounds for each device?

For example, I have read that Retina requires at least 2x resolution, so for iPhone 5, with a resolution of 1136 x 640 pixels, I would use a canvas on Illustrator or Photoshop with dimensions of 2272 x 1280 pixels? Then what about if I am also publishing it for non-retina screens, will I have to make new images with reduced resolution?

    Turing a screen 90 degrees doesn't changes it's relationship to other screens.

    The important thing is aspect ratio.

    The screen resolution of all iDevices is easily available online, just Google whatever device you need to find out about + 'resolution'.

    No, just 1136 x 640 pixels, the x2 resolution refers to your GS project size.

    These will be automatically generated for you when publishing.
