If I upgraded to pro for a year, And was making money by ads and in app purchases, what would happen after the year is over? Would I just not get the features, or would I stop making money

    You would continue to earn money. The only thing that will change by not being pro again is the ability to update/edit your application since you would no longer have pro features to do so.

    If you think about it, Apple (or Google) doesn't know that you created your app using GameSalad. So if your software license changes with GameSalad, your app is still published on the App Store and Apple has no idea that anything is different. Of course, you could later purchase a Pro license and continue to update that app or publish new apps.
