Should gamecenter work from the gamesalad viewer?
If memory serves it shows a banner or text to say score would be updated, achievement would be gained, and Game Centre would be logged in etc. It doesn't actually connect to Game Centre though. It's been a while.

No. GameCenter Leaderboards are displayed in their own interface "outside" of your app.
You could user our solution (signature) if you want access to the values.
End of next week our cross platform leader-boards will also be extended to multiple leader-boards per app.
