Table Update Rules

Does anyone have a list of Do's and Dont's when it comes to tables and pushing out updates to live apps?

For example, I now know that I shouldnt add columns to tables for an update, as the tables wont work after they are updated.

But that's all i've learned so far. Can you add rows to currently established tables? Should a new table be created for every update if new variables need to be stored?
