If you have confidence the game will do well you should offer a bit more up front or at least say 50/50 if it makes less than 2-3k the first month and if it makes more then their % share goes down incrementally. So if it's not too successful they still can get a decent cut... if it's VERY successful they won't complain about 15%.
I would suggest that you offer a percentage or a minimum amount, whichever is higher. So for example, for graphic services, you offer 15% of the revenue or $1,000, whichever is higher. That way, the artist is guaranteed to make at least $1,000 but could make more if the game is really successful (which the quality of the graphics will likely have a hand in).
