You can submit your App privately online and give people codes to download it or something. I'm not sure how to go about this, but i'm sure someone jump on here and give you the key to life!
Whatever you do, Do not submit your app to the AppStore just for testing, before you actually test it, it's basically a dead sentence to your game. To give people to test your app you have 2 options : 1) the good old method, you need the UDID number of the person's device, then you add it to your device list in the provisioning portal, then you update your provisioning profile of the game and publish it (in gamesalad), your tester now can put your app in his device.

and, you can make a Macintosh build … and just email that to some testers for early design/development testing think it is a good idea to find-out if graphics/fonts/music … look/work/sound good early in your development stages.
to publish to Macintosh you do NOT need an Apple developerAccount … nor the certificates/provisioning profiles.

but that is what GS asks in Publish: "Choose your target platform" … Macintosh tell GS to change it to Mac desktop! as I was sorta giving directions … didn't want to write publish to desktop … didn't want to hear: I don't have that in my GS!
When I try it says "'Invalid IPA: the .app must be in a "Payload" (case-sensitive) folder.' what am I doing wrong?
What do you mean ? Do you want to upload your own game to testflieght ? If so, you need to put your .app file in a folder. Then call the folder "Payload". Then unzip the Folder. Last but not least you need to change the payload.zip to your payload.ipa. It should work
