How do you measure FPS with an ad hoc build?

Hello Everybody,
I have seen many of you mention that you had a great increase in FPS by doing bla bla bla... However, I don't know how to see that frame rate on the iPhone or iPad. Do you install an app? Is your iDevice hooked up to the computer which then measures it?
