What are you using to make your video trailers?

Hi... I'm always impressed by the quality of the video game trailers that are posted to these forums, and I'm curious about how you're all making them :-)
How do you easily record iPhone/iPad screen activity? I have tried to record the screen a bit in GameSalad itself (with Quicktime on my Mac) but the resolution wasn't there... not sure if I'm doing something wrong or if zooming out to 50% in the player doesn't work well or... what.... heh.
Any guidance or general starting points would be helpful.. thanks!
