Is there not an updated method of Apple Publishing?

Is there anywhere that has an updated step by step method to apple publishing? I am following along to what is in the Cookbook, but when I try to deliver the app via Application Loader in Xcode, it says it is missing a Provisioning Profile and signing certificate, but I have already done all those according to the step by step.

Literally everything online is outdated by a few years. What is my best course of action?
